Homemade Nut And Seed Granola
Finding products made the way you want them isn't always easy.
I played around and made my own organic granola using only nuts and seeds, no oats, which most granola contains. Lightly salty, mildly sweet.
Many of the cleaner granola blends use coconut oil but
I didn't want the coconut flavor and
I'm trying to keep the saturated fat content a bit lower.
Sharing my recipe below - I can't stop snacking on them! (Use raw nuts as much as possible)
𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
1/2 c. almonds
3/4 c. cashews
3/4 c. pecans
1/2 c. pistachios
1/2 c. walnuts
1/2 c. pumpkin seeds
1/2 c. hemp hearts/seeds
2 T. flaxseed meal
2 t. cinnamon
1/4 t. salt
1/4. c. extra virgin olive oil
1/4 c. maple syrup
1 t. vanilla
Optional: dried cranberries or bing cherries for some tartness
Yields ~6 cups
𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:
mix dry ingredients in large bowl; using a handheld pastry cutter or chopper, give a rough chop
add wet ingredients to a pan, stir and warm slightly; pour over dry ingredients and mix well
place on parchment paper-lined sheet pan spread out and pressed down
bake at 300 for 30-40 min, convection bake to finish for 5 min
let cool for at least 15 minutes before storing in airtight container for the week at room temperature
