Plant-based Mexican Meal
I’m not one to tell anyone what type of diet to eat. Everyone’s bodies are different and complex. I WILL emphasize the importance of eating REAL food as much as possible, avoiding as much as possible the processed, high-sugar foods that you buy off the shelves at the supermarket or at fast food joints. The fewer ingredients in the food you buy, the better!
I played around with eating a plant-based diet for several months and learned so much about how to cook different vegetables in creative ways and use spices in ways I hadn’t before.
This Mexican meal was fun to create. I found ways to swap out my favorite animal proteins like carnitas, and also the corn and flour/gluten in tortillas.

Plantain tortillas in lieu of corn or flour tortillas (not too ripe but not too green is the sweet spot!)
