Quick Banana Protein Mug Cake
One morning, I was craving something different than my usual go-to’s for breakfast to start the day. Something warm and cozy, something sweet and maybe semi-indulgent without setting off my blood sugar at the same time.
I’ve dabbled in making some microwave mug cakes for an afternoon sweet treat to go alongside my coffee or matcha and thought I’d try experimenting with a protein banana bread mug cake.
Below is what I came up with and it was actually really good! It packs about 22g of protein as written and potentially more if you add toppings. Sometimes something quick (all mixed and made in under 1o min) thrown together can satisfy what your tummy is asking for and make you happy too!
ingredients
Serves 1
1/2 banana mashed
1 egg
1/4 c. almond flour
1 T. vanilla protein powder
1/2 T. melted butter
1 T. almond milk
1/4 t. baking powder
1/8 t. cinnamon
splash of vanilla
pinch of salt
directions
In a very large microwave-safe mug or small bowl, place all the ingredients and whisk to combine.
Microwave on high for about 3 minutes or until just firm to touch and toothpick inserted into the center comes out clean.
Eat warm.
Optional but highly recommend: I drizzled some coconut milk, honey and peanut butter for extra indulgence and flavor.
