Strawberry Cheesecake Protein Ice Cream

Strawberry cheesecake ice cream is one of my favorite flavors. This recipe took a few iterations but I think I finally got it down and wanted to share the love.

This ice cream could be a protein-packed snack but I personally use it as a dessert at the end of the night to round out my day and hit my protein goals if needed. A sweet treat without the guilt and control over my ingredients. What could be better?!

(Ninja Creami Recipe)

INGREDIENTS

  • 3/4 cup almond milk (Malk, Three Trees or Califia Farms Organic Almond Milk (unsweetened, 3 ingred)

  • 1/2 cup coconut milk (Native Forest Organic Coconut Milk I found to be the best)

  • 1/2 cup cottage cheese (Good Culture lactose-free)

  • 1 1/2 scoop/serving FlavCity Berries & Cream Protein Powder*

  • 1 T. collagen peptides (Vital Proteins)

  • Optional: maple syrup or honey (depending on your sweetness preference; I didn't need any)

  • Mix-ins:

    • crushed graham crackers (Siete Mexican Shortbread Cookies or Simple Mills Honey Cinnamon Sweet Thins)

    • fresh strawberries

  • *If you don't have this protein powder flavor, I've used vanilla protein with fresh strawberries to replicate same flavor but you may need to add sweetener

INSTRUCTIONS

  1. In a blender, blend all ingredients until smooth and creamy and add to a Ninja Creami pint container.

  2. Freeze overnight.

  3. Allow pint to sit on the counter for 15-20 minutes or run hot water around and under the container.

  4. Select ‘Lite Ice Cream’ and let churn for full cycle. Check consistency and add a splash of milk to ‘Re-spin’ only if needed.

  5. You can choose to crush or chop cookies and chopped strawberries before serving or add to pint and choose ‘Mix-ins’ to incorporate.

  6. Enjoy!
